This wine is from a unique, north-east facing plot called “Grand Carignan” which is located half-way up the vineyard, on Ensérune hill facing the Montagne Noire. These Carignan vines are over 45 years old and therefore qualify as old vines.
This and the method winemaking used, produces a wine with a distinctively fresh and fruity palate. Les Parcelles is supple and round with fresh red fruit aromas and mentholated notes in the finish.

Food & wine pairings | Perfect as an aperitif with hors d’oeuvre, and with cured meats (Serrano ham), white meats or Mediterranean vegetable dishes like roast aubergine or ratatouille. |
Winemaking | Mechanical harvesting in mid-September, from the Grand Carignan old vines plot. Skin contact at controlled temperatures and alcoholic fermentation in vats for three weeks, with regular pumping over to achieve slow extraction. Racking before malolactic fermentation, and then ageing in large oak barrels before bottling. |
